Set aside some time

Sometimes it takes something to happen for us to realise how special time spent with loved one’s is, and the irrelevance of everything else.

Material things are easily replaced and are seldom missed.

On the other hand, family, friends and loved ones are not.

They are the first ones to get the brunt of a bad day …. mammy’s included (who often take all the slack).

So on this note today MT and I made a date with Granny to cook up a storm with thanks to M&S.

We will be starting our day with Granny, picking up the ingredients listed below, probably followed by a coffee and a natter.

We then plan to go to Granny’s house for the day, cook together and hang out. If you would like to join in on our sentimentality, get all your ingredients together and come back next Tuesday for the cooking instructions. Maybe we can have a little web party. Also, this dish is a fish dish, perfect for anyone planning ahead for Good Friday.

M&S Super Wheatberry with Roasted Carrots and Salmon

What you will need:

300g baby carrots

2 tbsp olive oil

1 garlic clove, crushed

1 tsp cumin seeds

200g Super Wheatberry

125g Arbroath honey roast salmon slices, flaked

25g pack fresh dill, roughly chopped

50g pomegranate seeds

3 tbsp buttermilk
